We are salad obsessed over here! But really, it's all about the dressing! Seasonal ingredients really shine when you use the best ingredients and make your own dressing. Try this and we promise you will never buy store-bought dressing again!

Ingredients

  • 1 small shallot

  • 1 T dijon mustard

  • 1 T portoula pine honey

  • 1/3 cup white wine vinegar

  • 1/2 tsp salt

  • 1/4 tsp freshly ground black pepper

  • 2/3 cup extra virgin Greek olive oil

Directions

  • Put all ingredients in a jar with a tight-fitting lid and shake well. Alternatively, whisk all ingredients except the oil in a small bowl - then slowly whisk in the oil.

Notes

  • You can make so many variations of this simple vinaigrette by using different vinegars, mustards, honey varieties (like fir and oak), and fresh herbs.
