Recipe by adapted from Nadia's Healthy Kitchen
Course: Snacks, DessertCuisine: MediterraneanDifficulty: Easy

When one of our favorite retailers shared a video with this recipe, we couldn’t wait to try it with Portoula honey. A few tweaks later, it’s become our go-to when we’re craving something sweet, crunchy, and a little more wholesome.

Ingredients

  • 125 gr pistachios (1 cup)

  • 100 g walnuts, roughly chopped (3/4 cup + 1 Tbs)

  • 1 tsp ground cinnamon

  • 1/2 tsp ground cardamom

  • pinch ground cloves

  • zest of one lemon

  • zest of one orange

  • 2 1/2 Tbs portoula OAK honey

  • 1/2 tsp rose water

  • 100 gr dark chocolate, melted (about 3/4 cup)

  • To garnish:
  • crushed pistachios

  • rose petals (see notes for sourcing info)

Directions

  • Preheat oven to 350F
  • Roughly chop the walnuts, then add to a large mixing bowl along with the pistachios, spices, zest, honey, and rose water. Mix well with rubber spatula.
  • Transfer into silicone molds.
  • Bake for 8-12 minutes, or until golden brown. Allow to cool completely; the mixture will harden as it cools.
  • Once cooled, use a spoon to drizzle melted dark chocolate into the molds so the chocolate encapsulates the bars. You can also dip them in melted chocolate.
  • Refrigerate until the chocolate is set.
  • To serve, garnish with a sprinkle of ground pistachios and rose petals.

Notes

  • Feel free to use whatever nuts you like or have on hand to make this recipe, and use whatever spices you like!
  • If you don't have rose water, just omit it.
  • You can also make this in a loaf pan, using parchment paper to line the pan. You will have to cut the bars when cooled, then dip in melted chocolate.
  • We source our rose petals from Curio Spice (www.curiospice.com).
